Pestat di Fagagna

Slow Food Presidium

Pestat di Fagagna is a savory mixture of fresh pork lard, vegetables, herbs and spices, stuffed into natural gut and dried . It is not eaten sliced as a salami, though, but it is used for the preparation of many hot recipes such as roasts, soups, sauces, stewed meats…

It has been added in the 30 best Italy’s “salumi” by Gambero Rosso guide.

We produce two types of this tasty sauce: traditional or Salsarossa (with tomato). They are both perfect for pasta, croutons or polenta. It is available in glass jars.
